Does removing a card from my iPhone Wallet also remove the card from my paired Apple Watch?
No. Any card added to your Watch is treated independently to the card(s) on your other devices.
However, if you unpair your Apple Watch from your iPhone, the card(s) on your Apple Watch will be removed.
